Simple Campfire Recipes

One of fabulous things about camping, are the campsite meals you get to cook! Everything seems to taste better over an open fire. Many of us lean towards the usual campsite dishes like hamburgers and hotdogs. It’s quick and easy, right? So, we have put together a small list of simple, yet delicious recipes to try next time you go camping.

Salmon and Asparagus
Make a ‘boat’ out of foil and place the salmon inside (keep the top of the foil open). Drizzle the salmon with olive oil, then add some garlic and herb spices along with some lemon slices. Place over the fire until the salmon is fully cooked.
Wrap the asparagus in foil, add some olive oil and cracked pepper. Bake until tender. Just like that, you now have a wonderful, yet simple salmon and asparagus dinner.

Southwest Sweet Potatoes
Potatoes are a campfire classic! And you can easily jazz them up for some extra flavor. Wrap the sweet potatoes in foil and cook until soft. Carefully cut the potatoes in half. Add black beans, corn, shredded cheese and diced tomato. Place back over the fire until the toppings are warm, and the cheese has melted. Add sour cream and avocado if desired. This is an excellent vegetarian option.

The Caprese Grilled Cheese
A regular grilled cheese, only better! Take your bread and add brie cheese and some mozzarella. Spread some pesto sauce on one slice of bread and add sliced tomatoes. Wrap your sandwich in some foil, place it over the fire, and toast until the cheese has melted.

Spinach, Red Pepper and Egg Scramble
In a skillet add a few drops of olive oil. Toss in some spinach and chopped red peppers. Cook until soft. Crack eggs directly into the skillet with the veggies and occasionally mix until the eggs are fully cooked. You now have a very nutritious and delectable breakfast. You can even add some cheese over the scramble for some extra flavor.
